Overnight Oats ~ Strawberries & Honey

~A deliciously simple whole food solution for a quick healthy breakfast.~

As a busy working mom of 3 I’m always on the go. Running from drop off to pick ups, getting everyone to their activities on time and just generally rushing and being late. Often times not having enough time or patience to feed myself...and it’s usually during breakfast. I know...I know...not eating breakfast is not healthy!!! So, I started thinking of healthy alternatives for “on the go” meals for myself. Mainly because well we all know my kids eat well and often and I don’t. I came across a few awesome recipes and decided to try them out. After trying different types of yogurts, fruits and nuts I came up with my own delicious version of Strawberries and honey! It’s light, refreshing and the perfect breakfast bite to get you going in the am! Oh and peanut butter...it’s not in the recipe but I added it a few times as a topping and holy cow!!! Try it! You’re welcome!!!! 🥜🍯 Ingredients: 1 mason jar 1/2 cup oats 1/2 Greek vanilla yogurt 1/2 unsweetened almond milk 1 tablespoon chia seeds 1/2 banana sliced *(optional: used to thicken & sweeten but can be left out) Handful of sliced almonds 1/2 teaspoon cinnamon Drizzle honey Directions: Mix all ingredients together, cover, Shake & leave overnight . At least 6 hours.⏱ Serve: Top with any fresh fruit , nuts, shredded coconut, honey. 🍌🍓🥥🍯
